SESAME NOODLES WITH TOFUKAN
adapted from the Jews for Jesus Family Cookbook
 

1/4 cup creamy peanut butter
1 Tbsp. honey or liquid sweetener
2 tsp. vinegar
1 Tbsp. soy sauce
1/2 cup bouillon
1/2 tsp. sesame oil
1/4 tsp. hot sauce
1 package tofukan [marinated tofu], cut in strips
1 small onion, chopped
8 oz. soba noodles, fettucini, or thin spaghetti
scallions, crushed peanuts--optional

Mix peanut butter, honey, vinegar, soy sauce, bouillon, oil, and hot sauce in blender.

Saute tofukan and onion in hot oil until browned.

Cook noodles according to package directions.

Mix noodles, sauce, and tofukan.  If desired, add jar of peanut sauce, after heating it for 90seconds in microwave.  If too cold, reheat in microwave.  Top with scallions and peanuts, ifdesired.

Makes 4-6 servings.
