HAMANTASCHEN DOUGH #1
This makes a cookie-type dough.

1/2 cup butter
1 tsp. grated orange rind (optional)
1 cup sugar
1 egg
2 Tbsp. orange juice
2 cups flour
2 tsp. baking powder
1/4 tsp. salt

prune lekvar, poppy seed filling, jams



Cream the softened butter with orange rind; add the 
sugar gradually, beating until fluffy.  Add egg and 
orange juice and beat well.  Add the dry ingredients 
together, to make a soft dough that can be handled. 
Chill before rolling out.  Roll out on lightly floured 
board to 1/8 inch thickness. Cut into 3-inch circles 
with cookie or biscuit cutter.  Place 1/2 Tbsp. filling 
(prune lekvar, poppy seed filling, or jam) in center of
each round.  Brush edge with water if desired.  Fold 
three sides in towards center, pinching to form 
three-sided cookie.  Bake on ungreased cookie sheets at 350 degrees for 9-10 minutes, until cookies begin to brown. 

Makes 4-5 dozen.
