GOAT CHEESE PUFFS
 

4 oz. crumbled feta cheese
7-8 oz. crumbled chevre cheese
1/2 box frozen, chopped spinach, defrosted and drained
1 small red pepper, roasted and chopped
1 can artichoke hearts, drained and chopped (NOT marinated)
garlic powder
basil
Seasoned Salt
2  1-lb. boxes puff pastry sheets,
defrosted according to package instructions

     Mix together cheeses, spinach, red pepper, artichokes, 
     and seasonings to taste.

     Roll out one sheet of puff pastry to flatten and spread just
     a little (around 10-12" square).  Cut into three strips, then
     cut into three strips the other direction, making 9 squares.
     Put a glob of filling (around 1 Tbsp.) in center of each 
     square, moisten edges with water, and fold over into 
     triangle, pinching edges to seal.

     Repeat with remaining pastry sheets.  Arrange triangles on
     ungreased cookie sheets.  (Fill any extra squares with jam.)

     Bake in preheated 400* oven for 15-18 minutes.

     Makes 6 servings.
