1  15-oz. can black beans
1  15-oz. can small white beans
1  15-oz. can small pink beans
1 11-oz. can niblets corn
2  15-oz. cans diced tomatoes
2 packages chili seasoning ( I use McCormicks )
garlic powder
1 red pepper
1 green pepper
1  purple onion
oil for frying

     Dice onion and peppers -- chopping them in a food 
     processor is fine.  Saute them in hot oil over medium-
     high heat until tender, about 5 minutes.  Add beans, 
     corn, chili seasoning, and garlic powder to taste. 
     Heat to boiling on medium, then reduce heat and 
     simmer for 10 to 15 minutes to blend flavors.

     This is especially good served with warm corn 
     muffins, if you can find a vegan recipe ...

     Makes many servings, at least 8.
